Kim Fatt buys from fishing boats and aquaculture farms around Sandakan Bay and keeps live stock in seawater tanks at its depot near the fish landing jetty. Mud crab, tiger grouper, hybrid grouper, slipper lobster and tiger prawns make up most of the trade, along with chilled reef fish.
Seafood restaurants in Sandakan and Kota Kinabalu are supplied daily. Live crab and grouper are packed in oxygenated boxes and air-freighted to Chinese restaurants in Kuala Lumpur and Johor Bahru, usually arriving the same evening. Prices move with the catch and are confirmed each morning.
